Pumpkin-Pecan Overnight Oats

I have been wanting to whip up some overnight oats for awhile. I used to eat oatmeal almost weekly I loved it so much, but I think I wore myself out on it. These overnight oats are just the thing to get me back on the oat wagon (plus, they taste like pumpkin pie!!)

This recipe makes a pretty large amount, so I used a quart size mason jar as my container. This would make a fantastic breakfast, light lunch or snack that you can have for several days. If you don't want to commit to a jar full or overnight oats, cut the recipe in half. Oh, and it is yummy. Like said pie ^. No one's judging if you feel like adding whipped cream on top.

P.S. Happy day after Halloween! I hope you all had a fun, safe night! We stayed in for the first time in several years, and it was great. Tonight we are going to a costume party, which should be fun! I have a last-second costume in the works, we'll see how it works out ;)

Pumpkin-Pecan Overnight Oats

2 cups quick oats

2 cups milk of choice (obvs I used my go-to almond milk)

Heaping 1/2 cup pumpkin (not pie filling)

 1 teaspoon vanilla

Dash of each: nutmeg, cloves, ginger

2 teaspoons cinnamon (I love cinnamon, start with one if you aren't a cinnamon junkie like me)

1/2 cup pecans

2 tablespoons pure maple syrup (this is really just to your taste)

1 tablespoon flaxseed meal

Add all ingredients to container with a tight fitting lid, such as a mason jar. Mix well. Stick in the fridge overnight, or about 12 hours. Eat hot or cold.
