TGIF!! The last couple days have been so busy I've barely been home at all except to sleep, much less work on bloggy stuff. Today is my day to get school and chores done, but I thought I'd give you a recap of the last couple days- plus some tips for keeping your eating on track even when things are nuts!
Monday I made a soup, and I've eaten the leftovers for dinner alllllmost every day since. I wanted to recreate Olive Garden's Zuppa Toscana but make it a bit healthier, and I think I succeeded (I keep calling it "Zuppa Tos-kinda"). It's warm, filling and hearty without being heavy. It also stood up surprisingly well to being reheated, making it the perfect dish to have on hand during this crazy week.
Tuesday was my first day back in the office for a meeting and prepping lessons, and my first day back in grad school after winter break. I packed myself a light lunch, juuuust in case things went longer than expected at the office. Whaddya know, they did. Bell peppers and hummus might be my new fave snack! Packing healthy snacks and lunches is the best way I have found to stay "on track" with good eating while at work. It's cheaper than eating out, and there's less chance you'll be tempted by those donuts in the break room (or pastries at the coffee stand) if you have healthy things to munch on.
P.S. I got this funnel neck wool blend coat for Christmas (from ON, where else) and I loooove it!! It's great quality and the light grey will transition easily to spring,
Wednesday was a full day of teaching, and then I went straight to my hairdresser for a cut and highlights. It felt so good to chop off a few inches and go back to blonde, which is my usual color. I hadn't cut my hair for so long it was a real nightmare (as you can witness in previous posts, and the above outfit ^). I tried to get a few shots of my all grey/black/white outfit. Yes, totes in the public restroom, of all places.
Stopped at SBUX for a soy latte. Red cups are still around! It's the little things :)
Thursday was another full day of teaching. It was also freezing, so I had my giant fur-lined parka on most of the day <3. After teaching I stopped by my mom's to visit and go to the chiropractor. Nothing makes my back and neck feel better than an adjustment!
Lunch was a Kind bar, which are one of my favorite options as far as bars go. They are low in sugar, gluten free and made with natural ingredients, and they have enough protein and fiber to give me lasting energy. When I'm running out the door for work and haven't made a lunch, I grab one of these.
And here we are today! Today is all about catching up on school work, house work and getting supplies for a few recipes I can't wait to test. :D Plus comfy sweaters, beanies and leggings, and the "Holy Chic" tee ever blogger in the world has (I found it in store for $4! Wee!)
