BLTA. Blue Cheese. Caesar Salad. Tastier things were never before combined. (OK hyperbolic yes- but admit it, that sounds damn great right!?)
This magical concoction came about on a crazy hot night when I- *GASP*- did not feel like cooking. I KNOW: "but Rachelle you love to cook you blog about food I don't UNDERSTAND!!!" Well, it happens. Especially when it's a hot, sticky, sweating-while-standing-still night.
The kicker? This is all based off a Caesar salad kit. Just a plain Jane, humble Caesar salad in a bag from Safeway. I don't buy them often, but they are handy in a pinch, and- case in point- easy to dress up into something lovely and satisfying. I've now made this a few times and it always seems to hit that perfect spot. It's loaded with goodies and easily stands alone for a dinner but still leaves you feeling perfectly full, not over-stuffed.
The only true cooking here is with the bacon. I suppose, if you REALLY wanted to, you could use bacon bits instead. But OMG... don't. ;)
BLTA Blue Cheese Caesar Salad
Serves 2 for dinner
1 Caesar salad bagged kit
1 avocado (if you aren't avo fiends like us, you could use 1/2)
1/2 pound bacon
2 small handfuls cherry tomatoes (any small tomato will do- even larger tomatoes work, just chop them smaller)
1/2 cup blue cheese
Fry bacon until desired crispiness. Drain on paper towels and crumble to bite size pieces. Cut tomatoes in half. Slice avocado. Empty salad kit contents into bowl. Add all other ingredients and toss to combine. Serve immediately (a few grinds of pepper on top is tasty!)
